Ingredients

  • 10g salt

  • 5g sugar

  • 12g brewer’s yeast

  • 150ml plant milk

  • 150g all-purpose flour

  • 125g manitoba flour

  • 1 Leek

  • 30ml olive oil

  • 1 tbps flaxseed meal

  • 9 slices vegan cheese

  • 50g breadcrumbs

  • Onion & garlic powder

  • 80g vegan bacon cubes (Food Evolution)

Method

  1. Mix in a big bowl flours and salt;

  2. Add flaxseed meal and 2,5 tbsp water and stir (Flax egg). Let it rest for 5 minutes to thicken.

  3. Mix in a small bowl warm plant milk, yeast, flax egg and sugar;

  4. Pour it into flour mixture and stir until uniform, then pour olive oil;

  5. Tip onto a floured surface. Knead until smooth for 15 mins;

  6. Place the dough in a lightly floured bowl and cover for 1:30h**;

  7. On a floured surface flatten the dough and stretch it out using a rolling pin***;

  8. Divide the dough into 17 equal strips;

  9. Make them into the shape of a circle;

  10. Place them in a donut baking pan;

  11. Cover the donuts and let them rise at room temperature for 40 mins;

  12. Heat oven to 200°C;

  13. Brush the donuts with plant milk and bake for 25 mins;

  14. Once ready wrapped them in a cloth and let them cool down a bit;

  15. Roast breadcrumbs for 5 mins and add garlic and onion powder;

  16. Melt the cheese on top of the donuts using a microwave;

  17. Cook the vegan bacon cubes (Food Evolution) as shown on the package;

  18. Garnish the donuts with bacon cubes, breadcrumbs and finely chopped leek.

Notes

* The recipe is for 17 small donuts if you go for the normal ones you should get around 8 .
** The dough has to double in size.
*** Make sure you get some sort of a rectangle.
