ORANGE LOAF CAKE

Ingredients
300g (10.5oz/2 ⅓ cup) all-purpose flour
150g (5.3oz/¾ cup) sugar
16g (0.5oz/0.2 cups) baking powder
120ml (4fl oz/ 0.5 cup) groundnut oil*
200ml (7fl oz/1 cup) plant milk
150ml (5fl oz/¾ cup) orange juice
125ml (4fl oz/0.5 cup) vegan yogurt
200ml (7fl oz/1 cup) vegetable cream
2 Tbsp Orange zest
Method
Preaheat oven to 180C (350F) and grease a 9x5” loaf tin;
Place flour and sugar into a bowl and stir with a whisk until they are well combined;
In a separate bowl mix together oil, orange juice, milk and orange zest;
Pour the wet ingredients into the dry ingredients and give it a good mix;
Add baking powder and mix again;
Pour the mixture into the loaf tin;
Bake in the oven for 35 mins or until a toothpick inserted in the center comes out clean;
Whip the cream and spread it on top of your orange loaf cake;
Feel free to garnish it as you wish. You could caramelise some orange skin or you could add some wild berries. It’s up to you.
Notes
* You can use any seed oil as well.
