“CHICKEN” CACCIATORE

Ingredients
165g vegan chicken*
20ml olive oil
2 cloves of garlic
1 celery stalk
1 medium onion
2 medium carrots
1 rosemary branch
3 laurel leaves
3 sage leaves
150g tomato pulp
40ml water
2 tsp salt
1 tsp black pepper
Method
Finely chop celery, carrots, onion and sage leaves;
In a non-stick pan, brown in olive oil the cloves of garlic until it becomes golden, then take them off;
Add laurel leaves and rosemary branch;
Sauté the veggies for a few minutes;
Add vegan chicken and let it cook for around 10 mins, adjusting salt and pepper;
Pour tomato pulp and give it a good stir;
Cover the pan with a lid and cook on medium for around 15 mins;
Pour water ocassionally;
Remove laurel leaves and rosemery branch.
Notes
* TVP, seitan or tempeh can be used instead.
