VEGAN NACHOS

Ingredients
150g (5.3oz/6 cups) nachos
165g (5.8oz/7 cups) vegan bacon
2 small green peppers
4 slices vegan cheese
50g (2oz/1/3 cup) vegan grated cheese
150g (5.3oz/1 cup) guacamole
300g (10.6oz/1 1/2 cup) homemade ragu’ *
1/4 lemon
Method
Preaheat oven to 180C (350F);
Squeeze lemon into guacamole and give it a good stir;
Wash green peppers, remove the seeds and finely cut them;
Cook vegan bacon as shown on the package;
Place nachos at the bottom of a baking tray and evenly spread them;
Place on top a layer of vegan ragu’, guacamole, 2 slices of cheese, bacon and grated cheese;
Add another layer of nachos and repeat the process;
Add green peppers and a few leaves of parsley (optional);
Bake for around 20 mins.
Notes
* If you don’t wanna make ragu’ yourself you can get a store-bought one.
