CORNFLAKE CAKES

Ingredients
100g dark chocolate*
15ml coconut oil**
40g cornflakes
10g pistachio
Method
Roughly chop dark chocolate and place it a medium size bowl;
Microwave it for 1 min or until it’s completely melted;
Stir in coconut oil and make sure there are no lumps;
Add cornflakes and stir until they are covered in chocolate;
Using a spoon place the mixture in a muffin tray;
Sprinkle some pistachio on top;
Let the cornflake cakes rest in the freezer for at least 40 mins;
Notes
* Just make sure it’s vegan.
** It’s not essential but it will make the cakes extra crunchy.
You’ll get 6 cornflake cakes.
