SMOKED BRUSCHETTA

Ingredients
250g cherry tomatoes
80g vegan pancetta*
Olive oil as needed
A pinch of salt and black pepper
Basil
Method
Cut two slices of bread;
Pour a drizzle of olive oil on a grill;
Toast the bread for about 2-3 minutes on each side;
Cut tomatoes in four pieces;
Place them in a bowl, add a pinch of salt and a drizzle of olive oil;
Stir and let it rest for a while**;
Cook vegan pancetta as shown on the package;
Place tomatoes on your toasts then add vegan pancetta;
Grind pepper on your bruschetta and place some basil on top.
Notes
* Smoked TVP, seitan or tempeh can be used instead.
** So that the water will come out of the tomatoes.
