CHICKPEA FRITTATA

Ingredients
360ml sparkling water*
120g chickpea flour
2 tsp smoked paprika
1 tsp kala namak (purple salt)
1 tsp dried basil
1 tsp turmeric
2-3 sundried tomatoes
10ml olive oil
165g vegan chicken
50g spinach
Method
Sift the flour in a big bowl;
Add the spices (salt as well) and give it a good mix;
Pour sparkling water;
Using a whisk stir as long as all the ingredients are perfectly combined and there are no lumps;
Steam spinach for around 15 min;
Cook vegan chicken as shown on the package;
Finely chop sundried tomatoes;
Pour a drizzle of olive oil in a non-stick pan and once it’s warm enough pour the liquid mixture;
Add spinach, tomatoes and vegan chicken;
Cook covered, medium heat, 10 minutes each side;
Once it’s ready let it rest for at least 5 min.

* It can be used also beer or still water
