Ingredients
20g dark olive pâté
20g pesto
Green radicchio
100g aubergine
25g Happy White, vegan camembert (Happy Cashew)
200g mushrooms
5g salt
75g bread*
Method
Clean the aubergine, slice it and place it on the grill for around 20 mins, medium heat;
Clean the mushrooms, slice them up and cook them for around 20 mins with a bit of water**. Remember to add salt once they are almost ready;
Cut the bread in half and grill it***;
Spread dark olive pâté at the bottom and pesto on the other half;
Starting from the bottom just place green radicchio, grilled aubergine, sliced Happy White (Happy Cashew) & mushrooms.
Notes
* Any type of bread is fine
** You can use olive oil instead of water.
*** You can skip this step.
