CHARCOAL PIZZA

Ingredients
200g durum wheat flour
400g all-purpose flour
5g charcoal powder
10g salt
15g yeast
330ml warm water*
10g brown sugar
15ml olive oil
800ml homemade tomato sauce
70g smoked paprika cheese, vegan cheese (Happy Cashew)
200g cherry tomatoes
30g capers
50g zucchini
100g artichokes hearts
Method
Mix in a big bowl flours, salt and charcoal;
Mix in a small bowl warm water, yeast, sugarcane and olive oil;
Pour into flour mixture and stir until uniform;
Tip onto a floured surface, knead until smooth for 10 minutes;
Place the dough in a lightly floured bowl and cover for 2-3h;
Divide the dough into 7 balls;
On a floured surface flatten dough balls and stretch them out into rounds;
Place them on a baking tray with parchment paper;
Spread tomato sauce and add the toppings;
Heat oven to 220°C, bake for 30 min.
Notes
* It doesn’t have to be too warm otherwise you’ll kill the yeast.
